There is a "rosé" new-born in the Castle of Cacchiano. The Spumante Brut Metodo Classico was recently launched. What is surprising is the varietal used: pure Sangiovese. «It is our enologist that had this idea», Giovanni said, «the soil of Cacchiano has a high acidity level and gives grapes which are good for the sparkling process».
